The Story of the Ceviche

You might not expect to find world-class ceviche along a Kansas rail-trail, but at Point Nine, we love defying expectations. Our Shrimp Ceviche was created for the diner who wants a “clean” start to their meal. It’s vibrant, colorful, and feels like a vacation in a bowl. We wanted to offer a dish that was naturally light and healthy without sacrificing any of the bold, zesty flavor profiles our guests have come to expect from us.

The Craft: Black Tiger Shrimp

The foundation of any great ceviche is the quality of the seafood. We use Black Tiger Shrimp, known for their firm texture and sweet, clean flavor. Unlike smaller, “mushy” shrimp often found in lesser versions of this dish, our Black Tiger shrimp provide a satisfying “snap” in every bite.

We marinate the shrimp with a fresh-made pico de gallo—onions, tomatoes, cilantro, and plenty of lime juice. The acid from the lime “cooks” the flavors together, creating that signature refreshing zing. To give it the Point Nine “cutesy” touch, we finish it with a drizzle of our tomato aioli, which adds a whisper of creaminess and a hint of garden-fresh tomato sweetness to the finish.
